Easy One-Pan, Flavor-Packed Sheet Pan Dinners

It’s fall. You’re cold. You’re busy. You just want a healthy dinner without six pans to wash when you’re done. Is that too much to ask?

Nope! We’ve got you.

Sheet pan dinners are the answer to your prayers. They’re an easy way to get dinner on the table without much prep or cleanup. Plus, they’re a great way to use up what’s in your fridge or freezer.

Sheet pan staples include sweet potatoes, potatoes, carrots, Brussels sprouts, broccoli, squash, and a drizzle of olive oil. But you can mix it up! Most proteins like chicken, shrimp, pork, tofu, and beans fit in nicely.

What have you got?

Apples

This time of year, you can literally pick apples up off the sidewalk. Any neighbor with a tree or two is trying to give them away. One solution is to put them on a pan!

Baked sausages with apples: This recipe combines a tart apple, sausages, carrots, fingerling potatoes, and red onion with herbs and some olive oil. But you can customize however you like based on what’s in your kitchen.

Pork, sweet potatoes, and apples or Chicken, apple, and Brussels sprouts: Combine a few fall favorites for a hot, satisfying meal in less than an hour.

Broccoli

Chipotle-lime shrimp: In 10 minutes, you can combine asparagus or broccoli, peeled and deveined shrimp, some potatoes and a squeeze of lime.

Roasted chicken, sweet potatoes and broccoli: Don’t let that broccoli go bad hidden in the fridge drawer.

Carrots

Sheet pan tofu and veggie dinner: Chop those carrots into chunks, add tofu (or protein of your choice), throw on any other veggies you want to use and bake.

Balsamic chicken with potatoes and carrots: It’s that easy! Pop in the oven for 25 minutes and call the family to eat.

Squash

Vegetarian Stuffing with delicata squash and brussels sprouts: Gluten and dairy-free, this vegan recipe is full of flavor!

Mustard chicken with butternut squash: Roasted chicken pairs well with butternut squash.

Extra fun!

Veggie Nachos: Cover the pan with a layer of tortilla chips, cover with black beans, bell pepper, chopped lettuce, radishes, green onion, cabbage—anything you’ve got—and bake.
